Rubies and Greens

This recipe is a real gem.

Preparation time:  10 minutes

Salad Dressing

1/3 cup orange juice

2 tablespoons olive oil

2 tablespoons honey

1/2 teaspoon salt

Ground black pepper to taste


1 bag baby spinach or mixed greens (5 oz.)

3 cups sweet cherries, pits removed

2 cups sliced English (hothouse) cucumber

1/2 cup finely diced red onion

Whisk together orange juice, oil, honey, salt and pepper; set aside. In large bowl, combine salad ingredients. Toss with salad dressing and serve immediately.

Serves:  6

2 Cups of Fruits and Vegetables per Serving

Fruit and/or Veggie Colors:  Orange, Green, Red

Nutritional Information per Serving: calories:133, total fat:4.7g, saturated fat:0.6g, % calories from fat:29%, % calories from saturated fat:4%, protein:2g, carbohydrates:24g, cholesterol:0mg, dietary fiber:3g, sodium:233mg.

Each serving provides:  An excellent source of vitamin C, and a good source of vitamin A and fiber.
